White Bean And Kale Soup

Creamy Tuscan White Bean & Kale Soup

I’ve been having a lot of fun with this soup lately. I’m always looking for yummy bean recipes and this one is fantastic. Savory, creamy, deliciousness in a warm bowl. I like eating it with a good crusty bread that I dip right in it.

Like most soup recipes, it’s flexible. The recipe as it’s written is vegan, but if you’re not following a vegan or vegetarian diet, you can sub in chicken broth. In my family we have varying levels on preference for meat so I’ve even added some chicken thighs in to cook with the soup before and served the meat on the side for everyone to add in as they like.

And if you don’t have kale, or don’t prefer it, you can sub in any leafy green. You can even mix up the type of beans used (though I do LOVE the creaminess of Cannellini beans).
