Love & Lemon’s White Bean Dip
I feel that part of my role as a gut health dietitian is to be an ambassador for beans. Beans are great for our guts and I’m always helping my patients find new ways to add them in (with tweaks as needed for my gut health patients who aren’t tolerating them so well).
Chili is a great go-to, and I shared a favorite chili recipe last month. Hummus is also a fantastic way to get more beans. And I love hummus – I lived in Jordan for a year and have had some phenomenal hummus there and now my 6 year old son and I make it together at home (so we can make it as lemony as he likes). But, chickpeas aren’t the only legume that make a great dip or spread.

And that’s where we get to this great recipe from Love & Lemons. This is a simple recipe and quick to make. Cannellini beans, olive oil, lemon juice, and garlic are the key players in this recipe. It gives the option for adding fresh rosemary and basil and I have yet to try it with those, but I have been making it with a za’atar blend I have and it’s been delicious. Za’atar is a Middle Eastern blend of herbs and spices and it adds a nice touch.
