Mediterranean Chickpea Salad

Spring weather is always back and forth, and while I’ve still been making some soups lately, we’ve also been having enough warm days that I’m getting some salads back in rotation.

This salad is one of my favorites because I love Mediterranean flavors, and also because it’s a flexible plant based meal. I really enjoy plant based eating, however, I don’t eat a fully vegetarian diet and do enjoy some meat in my meals. There are 5 of us around my dinner table each night and we have varying preferences for how much and which foods we prefer. That’s why I love flexible meals like this.

Using the salad as the main part of the meal provides that satisfying yummy cool crunch for a warm day. I personally don’t feel full from a salad meal alone and really enjoy adding in whole grains to balance things out and fill me up. And I know offering some chicken along with the meal helps to make sure I get a little extra protein for that lasting fullness too.

Each of these items could be made ahead, which can also help with the flexibility of this meal.

Made some farro to go with with it.

A plant based meal doesn’t have to be completely vegetarian.
When feeding a family it’s helpful to have flexible meals - everyone can choose how much they eat of each item
