Homemade Vegetarian Chili
It is a great time of year for soups, stews and chilis. Warm, hearty, filling foods for a winter’s day. And I have the perfect recipe for you to try. It’s a vegetarian chili with black beans, pinto beans, bell pepper, carrots, celery, onion, tomatoes and a nice array of seasonings. And because my kids love corn I usually add that in as well.
I don’t follow a vegetarian diet myself, but I do really enjoy vegetarian meals and I have been loving making this chili recipe. It’s flavorful, hearty and packed full plant foods. It’s both yummy and great for your gut!
If you’re thinking about doing more plant based eating but the thought of making a vegetarian meal feels out of your wheelhouse I’d encourage you to give this one a try – it’s a great way to branch out to more plant based eating. I hope you enjoy this recipe as much as I do.
